A fortified wine is a delicious, viscous wine-based sipping treat that is often enjoyed as a drink before or after dinner. The most common types of fortified wines are Madeira, Marsala, port, sherry, and vermouth. Fortified wine historically mainly originates from Europe but is now also extensively produced in the ‘new world’, most often employing the same traditional European production principles.

Port wine - aka "vinho do Porto" in Portuguese - is a Portuguese fortified wine produced from the Douro Valley. It is also produced in Argentina, Australia, Canada and France, etc. Great pairing with oysters and a crisp, and a hearty meat ragu.
Sherry Wines

Sherry Wines

Sherry (aka "Jerez" in Spanish) is a fortified wine made from the city of Jerez de la Frontera in Andalusia, Spain. "...sherry has one foot in the wine world, and one in the cocktail world...". Great pairing with garlic prawns and Cod croquettes, etc.
Vermouth Wines

Vermouth Wines

Vermouth is aromatized, flavoured with various botanicals (roots, barks, seeds, and spices, etc.) and sometimes coloured. The modern versions were first produced in the late 18th century in Turin, Italy. Drink with a steak sandwich and a slider.
Vins Doux Naturels

Vins doux naturels

Vins doux naturels are made from white Muscat grapes or red Grenache grapes in the south of France. It was first produced by Arnaud de Villeneuve (University of Montpellier) in the 13th century. Drink with sweet and sour/savory-sweet Asian dishes.
Quinquinas

Quinquinas

Quinquina is flavoured with cinchona bark and its bitter quinine compound. It is bilieved that it has medicinal properties. Drink with tart, acid goat cheeses and mouth-lacerating blue cheeses. A prominent quinquina is Lillet Blan.
Low-end Fortified Wines

Low-end Fortified Wines

Low-end fortified wine is an inexpensive wine that typically has an alcohol content (13-20% ABV). These inexpensive wines usually contain added sugar, artificial colour, and artificial flavor. Drink with many recipes based on meat, fish and pasta.
