Spirits around the world lie and age in barrels affected by the surrounding, usually humid, environment. During this time, more of the alcohol than the water evaporates from the barrel, so that by aging the proportion of alcohol in the beverage decreases. Only angels can enjoy what is going out of the barrel, so it is called "angel's share".
