Spirits around the world lie and age in barrels affected by the surrounding, usually humid, environment. During this time, more of the alcohol than the water evaporates from the barrel, so that by aging the proportion of alcohol in the beverage decreases. Only angels can enjoy what is going out of the barrel, so it is called "angel's share". In Metaxa cellars, however, there is low humidity and stable temperature, and angels take more water and leave a more concentrated mixture of ripe muscat wines and top-quality spirits that have matured for decades.
